Chia Pudding with Berries

Ingredients

  • 2 cups almond milk, vanilla sweetened
  • 1/2 cup chia seeds
  • 1/4 cup shredded sweetened coconut
  • 1/4 cup fresh blueberries
  • 4 large strawberries

Preparation

  1. Blend the almond milk and chia seeds together in a blender.
  2. Pour mixture into 4 clear dessert dishes. Stir to evenly distribute the chia seeds.
  3. Refrigerate until set, about 1 hour in the refrigerator or 1/2 hour in the freezer.
  4. Top each serving with 1 tablespoon of shredded coconut, 1 large strawberry and 1 tablespoon of blueberries before serving.

Helpful hints

  • Most brands of almond milk contain added calcium. If you are on a low calcium diet this recipe may not be a good choice. You can substitute Homemade Almond Milk or look for a brand without added calcium.
  • Chia seeds are high in phosphorus, contributing to the 200 mg phosphorus in each serving of pudding. It is estimated only 40-60% of the phosphorus in whole grains, legumes, nuts and seeds is available for absorption. Check with your dietitian before including Chia Pudding with Berries in your diet.
