Hint of Lime Rice

Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup onion
  • 3/4 cup basmati rice
  • 1-1/2 cups water
  • 2 teaspoons butter
  • 1 lime

Preparation

  1. Heat the olive oil in a large sauce pan over medium heat. Chop onion and add to the pan. Cook until tender, about 2-3 minutes.
  2. Add rice and cook and stir for 30 seconds to 1 minute.
  3. Add water to the rice and bring to a boil. Once boiling, turn heat down to low, cover and simmer for 20 minutes.
  4. Remove the pan of rice from the heat. Stir in the butter.  Zest the lime and stir the zest into the rice. The zest should be about 2 teaspoons.

Helpful hints

  • If you are looking for more of a lime flavor, the lime can be cut in half and squeezed over the rice.
  • Look for unenriched rice.
