Ingredients
Marinade:
- 2 tablespoons olive oil
- 1 tablespoon ground paprika
- 2 teaspoons dried oregano
- Salt and pepper
Paella:
- 1 pound chicken thighs, boneless and skinless
- 1 pound of ²ÝÝ®ÊÓƵ Easy Chorizo sausage recipe
- 1 pound of shrimp
- 4 tablespoons olive oil, divided
- 3 garlic cloves
- 1 teaspoon red pepper flakes
- 2 cups uncooked short-grain white rice
- 1/2 bunch flat parsley
- 2 medium lemons
- 1 pinch saffron thread (see Helpful Hints)
- 1 large bay leaf
- 4 cups chicken stock
- 1 red onion
- 1 red bell pepper, large dice
Preparation
- Mix olive oil, paprika, oregano, salt and pepper in a bowl. Cut chicken into 2-inch pieces. Make ²ÝÝ®ÊÓƵ Chorizo sausage mixture. Peel and devein shrimp and set aside.
- Add chicken to marinade stir to coat. Cover and refrigerate until needed.
- Add 2 tablespoons olive oil to a large skillet over medium heat. Crush garlic and pepper flake. Stir in garlic and pepper flakes, sauté for 1 minute. Add rice and stir until covered in oil, about 3 minutes.
- Chop parsley and zest lemon. Add saffron leaves, bay leaf, parsley, chicken stock and lemon zest. Stir until well combined and bring to a boil. Reduce heat and simmer for 20 minutes.
- While rice is cooking, heat remaining olive oil in a skillet over medium heat. Stir in chicken and cook for 3 minutes. Dice onion and add to chicken, cook until translucent, about 5 minutes.
- Large dice bell pepper. Add pepper and sausage mixture to pan and stir, breaking up sausage for about 5 minutes. Add shrimp cook for 2 minutes.
- Spread rice into a serving dish and top with meat and seafood mixture.
Helpful hints
- Saffron can be substituted by using 1/4 teaspoon paprika and 1/4 teaspoon turmeric.
- If you are on a diet that requires less protein, you may cut the meat portions in have or as much as needed.
- Store bought chorizo can be used, but it is much higher in salt/sodium.
